Gluten free sourdough

I have been gluten free since I was 35 years old and dairy free for the last 4 years. Going to restaurants and travelling within South Africa hasn't always easy. Its easy if we travel by car to our destination. I usually freeze breads/rolls/falafels/pita breads, etc for the trip.


The last time we flew to Kruger National Park I presumed that I would find gluten free rolls and other treats from Nelspruit Woolworths. They didn't sell anything gluten free. They obviously don't have a market for it. Since then we have been trying to work out how to make gluten free bread on the braai.


Thankfully I have found https://offtheglutenpath.co.za/. They have shops/restuarants in Sea Point and Woodstock, Cape Town. The Sea Point location is more of a restaurant with a small section to buy foods and Woodstock is more a shop with a small deli. They have a wide selection of fresh and frozen foods to choose from.They have a gluten free sourdough premix that we have perfected on the braai.


We tried this on the road for the first time at Gecko Rock and it came out perfectly.

Now you wait for it to double in size. On a warm day this should take about 2 hours.

Place the pot next to, but not too close to, the fire.  Rotate the pot regularly.  About once every 5 minutes.  You want the pot to heat up without burning the loaf.

Place some coals on the lid of the pot to brown the top of the loaf.  Keep rotating for around an hour.
